Ingredients
Scale
- 1 cup long-grain white rice
- 1 1/2 cups chicken broth (473 ml)
- 1/2 cup tomato sauce (118 ml)
- 2 tbsps vegetable oil
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Warm oil in a skillet over medium-high temperature, gently toasting rice kernels until they transform into a rich, golden-amber hue.
- Introduce finely chopped onions and minced garlic, sautéing until the aromatics release their fragrant essence and become translucent.
- Stream chicken broth and tomato sauce into the pan, incorporating ground cumin, seasoning with salt and pepper, ensuring thorough integration of all components.
- Elevate heat until liquid reaches a robust boil, then immediately reduce to minimal setting, securing lid tightly to create a sealed cooking environment.
- Allow rice to gently simmer for approximately 20 minutes, maintaining low heat and preventing lifting of the lid.
- During final 5 minutes of cooking, delicately fold diced carrots and tender green peas into the rice mixture.
- After cooking duration concludes, remove from heat source, allowing rice to rest undisturbed and covered for an additional 5 minutes.
- Softly separate rice grains using a fork, creating a light, fluffy texture before presenting the aromatic side dish.
Notes
- Toasting rice beforehand creates a nutty, rich flavor that elevates the entire dish’s depth and complexity.
- Rinsing rice removes excess starch, preventing clumping and ensuring each grain remains separate and fluffy during cooking.
- For a vegetarian version, swap chicken broth with vegetable broth without compromising the authentic Mexican rice taste profile.
- Adding fresh cilantro or chopped green onions after cooking provides a bright, fresh contrast to the warm, hearty rice.
