Scale
Main Ingredients:
- 1 pound ground beef
- 1 party-sized bag doritos
- 2 cups shredded mexican blend cheese
Protein/Beans:
- 1 (13.5 ounces) can black beans, rinsed and drained
- 1 package taco seasoning
Sauce/Dairy:
- 1 can cream of chicken soup
- 1 can rotel tomatoes
- 8 ounces (1 cup) sour cream
Instructions
- Preheat the oven to 350°F and prepare a casserole dish with cooking spray to prevent sticking.
- In a skillet, thoroughly cook ground beef over medium-high heat until completely browned, then drain any excess fat.
- Incorporate taco seasoning into the beef, allowing the mixture to simmer and develop rich flavors until it thickens slightly.
- Create a creamy filling by combining cream of chicken soup, Rotel tomatoes, sour cream, black beans, and half of the shredded cheese in a mixing bowl.
- Establish the first foundation of the casserole by evenly spreading a layer of crushed Doritos across the bottom of the prepared dish.
- Distribute half of the seasoned beef mixture uniformly over the Doritos base.
- Add another layer of crushed Doritos, followed by the remaining beef mixture.
- Complete the casserole with a final layer of crushed Doritos and sprinkle the remaining shredded cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes until heated through and cheese is melted.
- Remove from oven, let the casserole rest for a few minutes to set, then serve and enjoy the delicious layers of flavor.
Notes
- Customize the spice level by choosing mild or hot taco seasoning based on your heat preference.
- Replace ground beef with ground turkey or plant-based crumbles for a leaner or vegetarian version.
- Crush Doritos just before layering to maintain their crispy texture and prevent sogginess.
- Add extra crunch by reserving some crushed Doritos to sprinkle on top right before serving for a fresh, crispy element.
