Description

Cheesy Dorito casserole brings Tex-Mex comfort straight to dinner tables with layers of crunchy chips, seasoned ground beef, and melted cheese. Southwestern flavors meld together, creating a crowd-pleasing meal you’ll crave again and again.

Ingredients

Scale

Main Ingredients:

  • 1 pound ground beef
  • 1 party-sized bag doritos
  • 2 cups shredded mexican blend cheese

Protein/Beans:

  • 1 (13.5 ounces) can black beans, rinsed and drained
  • 1 package taco seasoning

Sauce/Dairy:

  • 1 can cream of chicken soup
  • 1 can rotel tomatoes
  • 8 ounces (1 cup) sour cream

Instructions

  1. Preheat the oven to 350°F and prepare a casserole dish with cooking spray to prevent sticking.
  2. In a skillet, thoroughly cook ground beef over medium-high heat until completely browned, then drain any excess fat.
  3. Incorporate taco seasoning into the beef, allowing the mixture to simmer and develop rich flavors until it thickens slightly.
  4. Create a creamy filling by combining cream of chicken soup, Rotel tomatoes, sour cream, black beans, and half of the shredded cheese in a mixing bowl.
  5. Establish the first foundation of the casserole by evenly spreading a layer of crushed Doritos across the bottom of the prepared dish.
  6. Distribute half of the seasoned beef mixture uniformly over the Doritos base.
  7. Add another layer of crushed Doritos, followed by the remaining beef mixture.
  8. Complete the casserole with a final layer of crushed Doritos and sprinkle the remaining shredded cheese on top.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes until heated through and cheese is melted.
  10. Remove from oven, let the casserole rest for a few minutes to set, then serve and enjoy the delicious layers of flavor.

Notes

  • Customize the spice level by choosing mild or hot taco seasoning based on your heat preference.
  • Replace ground beef with ground turkey or plant-based crumbles for a leaner or vegetarian version.
  • Crush Doritos just before layering to maintain their crispy texture and prevent sogginess.
  • Add extra crunch by reserving some crushed Doritos to sprinkle on top right before serving for a fresh, crispy element.
