Description

Comforting Mexican chicken casserole combines zesty spices and hearty ingredients for a crowd-pleasing dinner. Layers of tender chicken, melted cheese, and crisp tortilla chips create a satisfying meal you’ll crave again and again.

Ingredients

Scale
  • 1 1/2 cups cheddar cheese, shredded
  • 2 cups chicken, cooked and shredded
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup sour cream
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 8 corn tortillas, cut into strips
  • 1/4 cup green onions, chopped
  • Optional: jalapenos, diced
  • Optional: tomatoes, diced
  • Optional: cilantro, for garnish

Instructions

  1. Heat the oven to 350F (175C) and prepare a greased 9×13-inch baking dish.
  2. Combine shredded chicken, black beans, corn, salsa, sour cream, and taco seasoning in a mixing bowl, ensuring all ingredients are thoroughly blended.
  3. Create the first layer by evenly spreading tortilla strips across the bottom of the baking dish.
  4. Distribute half of the chicken and vegetable mixture over the tortilla base, covering it completely.
  5. Generously sprinkle cheddar cheese over the initial chicken layer.
  6. Construct a second layer by adding the remaining tortilla strips on top of the first cheese coating.
  7. Spread the remaining chicken mixture uniformly across the tortilla layer.
  8. Top the casserole with the final layer of cheddar cheese, ensuring complete coverage.
  9. Transfer the assembled casserole to the preheated oven and bake for 25-30 minutes until the cheese melts and develops a golden, bubbly texture.
  10. Remove from oven and optionally garnish with chopped green onions, sliced jalapenos, diced tomatoes, and fresh cilantro.
  11. Allow the casserole to cool for 5-7 minutes before serving to help it set and make cutting easier.

Notes

  • Swap corn tortillas for whole wheat or gluten-free options to accommodate dietary restrictions.
  • Reduce sodium by using low-sodium taco seasoning and homemade salsa to control salt content.
  • Make it extra spicy by adding diced green chiles or using a hot salsa variety for heat lovers.
  • Prep chicken ahead of time by using rotisserie chicken or quickly shredding boiled chicken to save cooking time.
