- 3 cloves garlic, minced

- 1 bay leaf
- Salt and pepper, to taste
Instructions
- Brown sausage in a large pot over medium heat, breaking it into small crumbles. Transfer cooked sausage to a separate plate.
- In the same pot, sauté onions, carrots, and celery until they become translucent and soft, approximately 4-5 minutes. Add garlic and cook for an additional 30-45 seconds until fragrant.
- Pour chicken broth into the vegetable mixture. Incorporate sweet potatoes, smoked paprika, thyme, rosemary, bay leaf, salt, and pepper. Increase heat to bring the liquid to a rolling boil, then reduce to a gentle simmer.
- Allow the soup to cook for 15-18 minutes, ensuring sweet potatoes become fork-tender and fully cooked through.
- Introduce kale or spinach, diced tomatoes, and red pepper flakes. Simmer for an additional 3-4 minutes until greens wilt and become tender.
- Reintroduce the previously cooked sausage into the soup, stirring thoroughly to distribute evenly and reheat.
- Remove bay leaf. Taste and adjust seasoning with additional salt and pepper as needed. Optional: Garnish with fresh parsley and grated Parmesan cheese before serving hot.
