  • 3 cloves garlic, minced

  • 1 tsp dried rosemary (or 1 tbsp fresh rosemary)
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. Brown sausage in a large pot over medium heat, breaking it into small crumbles. Transfer cooked sausage to a separate plate.
  2. In the same pot, sauté onions, carrots, and celery until they become translucent and soft, approximately 4-5 minutes. Add garlic and cook for an additional 30-45 seconds until fragrant.
  3. Pour chicken broth into the vegetable mixture. Incorporate sweet potatoes, smoked paprika, thyme, rosemary, bay leaf, salt, and pepper. Increase heat to bring the liquid to a rolling boil, then reduce to a gentle simmer.
  4. Allow the soup to cook for 15-18 minutes, ensuring sweet potatoes become fork-tender and fully cooked through.
  5. Introduce kale or spinach, diced tomatoes, and red pepper flakes. Simmer for an additional 3-4 minutes until greens wilt and become tender.
  6. Reintroduce the previously cooked sausage into the soup, stirring thoroughly to distribute evenly and reheat.
  7. Remove bay leaf. Taste and adjust seasoning with additional salt and pepper as needed. Optional: Garnish with fresh parsley and grated Parmesan cheese before serving hot.
